Here is a recipe for cookies that is getting a lot of attention at our house
lately.
Snickerdoodles
1 1/2 cups sugar
1 cup of butter (softened)
2 eggs
2 3/4 cups flour
2 tsp cream of tarter
1 tsp baking soda
1/4 tsp. salt
1/4 cup sugar
2 tsp. cinnamon
In a bowl, cream together the 1 1/2 cups sugar, butter, and eggs. In another bowl, stir together flour, cream of tarter, baking soda, and salt. Add to creamed mixture. Shape into 1" balls. In a small bowl, mix together the 1/4 cup sugar and cinnamon. Roll balls in sugar-cinnamon mixture. Place 2" apart on a greased baking sheet. Bake at 400 degrees for about 8-10 minutes. Makes about 4 dozen.
*On a side does anyone out there know what cream of tarter does for this cookie-it is in every snickerdoodle cookie recipe I've seen?
*On another side note in case anyone is reading this far along we are currently getting more freezing rain and snow today (some reports are up to 10 inches). School is letting out early and all activities that were scheduled for tonight cancelled. I haven't seen the ground since early December. No joke. I'm really not.
